Baked Ricotta With Basil and Tomatoes

A few days ago, I was enjoying a writing date with my friend L. She just launched¬†Autobiography of a Failed Writer¬†last month. (Don’t listen to her. She’s one of the best writers I know.) We eventually got peckish and decided that we should probably have something to eat to go with our wine. So we raided her fridge and came up with a bubbling ricotta solution.

Chili Con Queso Inspired Sandwich

I’m on my way to Austin, TX for SxSW, preparing for the 2 showcases Bright Antenna Records is hosting on Friday. It’s going to be intense!

Before I left, to put myself in the mood for SxSW, I made an attempt at Tex Mex. Chili Con Queso, if you don’t know, means peppers with cheese in Spanish. The dish is a fantastic cheese-based dip and can range anywhere from Velveeta melted into salsa to a blend of cheeses melted with fresh roasted chilis.

In other words, melted cheese and chilis. My two favorite things. So I took a little creative license.

This might be the least healthy meal I have ever cooked.

Easy Peasy Cheesy Cornbread

Sometimes, I just want some cornbread. Okay, make that pretty much ALL the time. And in my family everything delicious is both spicy and cheesy. Thus, cheese and chile cornbread was born.

You can make this from scratch or use a box of Jiffy cornbread mix. Either will work.
